Is there a way to change the SMS sender number in Everbridge Suite?

In most cases, no. For standard Everbridge SMS delivery (including in the United States), the SMS sender ID (short code or long code) is assigned to Everbridge and cannot be changed per customer or per organization. Everbridge relies on these assigned SMS codes for sending and receiving SMS traffic, and you cannot substitute your own public phone number for SMS.
If you need to use a specific internal number or a public-facing channel, you may be able to use Voice (caller ID) or email instead of SMS. For details on what is possible for your account and region, contact Everbridge Support or your Account Manager.
